I adore autumn. The leaves start to change, the weather gets a bit cooler, there is just something special in the air. Plus, it includes Thanksgiving, one of my favorite holidays. It’s basically the Olympics of food. Holiday or not, there’s nothing quite like cozying up on a chilly day in a warm sweater and fuzzy socks with a yummy bowl of soup. Here are some delicious vegetarian soup recipes you should be sure to try this season!
Irish Red Ale Butternut Squash Bisque (The Beeroness) The goat cheese and pomegranate seeds on top make this fall soup look oh-so-yummy (not to mention pretty).
Butternut Squash and Apple Soup (Delish) The perfect blend of sweet and savory to warm your day.
Pumpkin Spice Matzah Ball Soup (What Jew Wanna Eat) As the recipe writer attests, this soup is anything but basic.
Pasta e Fagioli (Italian Bean and Pasta Soup) (Serious Eats) A filling Italian favorite. This definitely counts as a main course kind of soup!
Instant Pot Tomato Basil Soup (Skinnytaste) I love recipes from this blog! This soup is easy and a great weeknight meal (especially with some grilled cheese to dunk!).
Broccoli Cheese and Potato Soup (Skinnytaste) Another selection from Skinnytaste. I could (and do) eat this soup all year round. It’s a great comfort food.
Curried Pumpkin Lentil Soup (Yummy Mummy Kitchen) A great way to sneak some protein in, this vegetarian soup has all the wonderful flavors of fall.
Grilled Corn and Potato Chowder (Cooking Light) A creamy, reduced-fat chowder. I love the flavors in this soup.
Samosa Soup (Yup It’s Vegan) A delicious way to have one of my favorite Indian foods in soup form!
Golden Trio Chipotle Fall Soup (with Tofu Cubes) (Happy Healthy Life) Mmm, crispy tofu and soup. Two yummy things could never go wrong!
